Ok, so this soup might not be the best thing you’ve ever tasted… but it comes pretty close. Ive been making this recipe for the last 12 years and it is still a favorite. It is eaten best with a good tortilla chip… the picture above is one of my favorite brands… it’s made with non GMO corn, no MSG, no artificial flavors or preservatives and it tastes AMAZING! Pure and simple. The name says it all- food should taste good! How to make this soup a little more healthy is by getting a good clean chicken base with no MSG. I have searched far and wide for years for a halfway decent tasting non MSG chicken base and this one above in the picture has won my approval. I think it’s better than even the chuck-full MSG ones. I buy this at Costco for the same price a health food store charges for a much smaller one… so head over to Costco, or look in your health food section. It’s a winner… it makes this soup taste incredible! Enjoy!
Tortilla Rice Soup
1 Tbsp. oil (I use a high heat oil like safflower oil whenever I saute anything… olive oil becomes somewhat toxic when heated to high heat, so look for an oil that is meant for high heat)
1/3 cup sliced organic green onions
7 cups organic chicken broth
2 1/2 cups cooked organic rice (brown rice tastes good too!)
1 can (10 1/2 oz) diced tomatoes with green chilis, undrained
1 can (4 oz) chopped green chilis
1 organic chicken breast, cooked and sliced
1 can (15 oz) organic great northern white beans (black beans also work)
1 1/2 Tbsp. organic lime juice
salt to taste
1 organic avocado, sliced
Saute green onions in the oil until tender. Add broth, rice, tomatoes, green chiles, beans and chicken. Reduce heat to medium, cover and simmer for 10 min. Stir in lime juice, salt ,and avocado. Pour into bowls and top with tortilla chips. Serves 6. YUMMY!



I also love the organic Better than Bouillon chicken base…I always have some in the fridge and the cupboard! Thanks for the Costco tip–I didn’t know they sell it there (since I don’t have a membership yet)!
Costco is seriously the best… I also buy all my organic chicken and beef there- among a lot of other things… they have a great organic selection!

I love this soup too! And my kids love it, so that’s a plus! I had no idea about olive oil and cooking. I would love to know more about cooking oils (I basically use olive and canola and sometimes butter) so I need to pick your brain about that one!
